The owners.

INDEPENDENCE:

“We” are Mark and Tricia Sobhani. A couple of college sweethearts who got the zany idea to roast our own coffee and open a little independent coffee shop.

We don’t like to say the “F” word around here.

I mean really. Do we look like a franchise? Take a look around. Our well-worn paint and coffee-stained comfy chairs should be the first clues that we are not a stiff and sterile franchise!

We’re having way too much fun as independent coffee house owners to be part of anything “corporate.” Which brings us to..

HEY! WHAT HAPPENED TO wf!

Well it all started way back in September of 2008, when some expensive lawyers in fancy Chicago offices sent us a letter saying we need to stop using the name ” ” because it’s already being used by a multi-million dollar corporate steakhouse chain. They said people would get us confused with them. WTF?! I know. It’s so absurd, it’s funny. And I actually feel sorry for them. Wow, they’re scared of little ole’ us?  I guess what it really means is they underestimate the intelligence of their fine city. They seem to think people will show up at their steakhouses, thinking they’re going to a mom and pop coffee shop. Wait. What? I know. Well, I could see how their residents could get us confused. Let’s see: We have 3 employees. They have thousands. We sell coffee. They sell steaks. We have one store. They have dozens. They are a publicly-traded corporation. We have

So after a few letters back and forth, we ultimately, decided it would cost us more to fight it then to just change the name. They’re bigger and have more money. So they win. Simple as that.

BEGINNINGS:

It all started way back when we took a trip to Costa Rica. Aside from the natural beauty and laid-back feel of the country, we experienced the “other side” of the coffee business. We took horseback rides through mountainside coffee plantations. We saw families harvesting the raw coffee cherries. We saw the milling and drying process — even turning some patio-drying beans ourselves!

From then, it was only a matter of time. The seed had been planted and the idea of a coffee house grew from there.

We knew what we saw in Costa Rica was just a small sample of what the world had to offer in terms of coffee. Coffee is the second-most traded commodity in the world, and so many countries have their own culture surrounding coffee.

So, until we can travel the world, we figured we’d bring the world to us. We set out with a goal of offering coffees from all over the globe. Whether it’s from Costa Rica, Brazil, or Tanzania, Rwanda or Indonesia, each coffee has its own taste, culture and history.

At Mildfire Coffee, we take great pride in what we do:

- The world’s finest coffees, batch-roasted right inside the shop.

- Fresh and flavorful drinks, hand-crafted lattes and cappuccinos.

-Whole beans available to take home.

- Excellent customer service and a relaxed, comfortable environment.
